Our StoryL'ÉCLAIR by Sarah Michelle is the first éclair specialty store and café in Singapore. It was founded in 2014 by Sarah and Michelle, two good friends and pâtissières with a similar dream and passion. This is our story.With the hopes of opening a pastry shop of our own, we traveled across the globe to Le Cordon Bleu Paris where we spent nine months learning the art of French pastry. Our weekly escapades along the cobbled streets led us to dozens of pastry shops, where we feasted on macarons, entremets and croissants. It was here in the City of Light that we drew our inspiration for an éclair specialty store.We found that numerous pastry shops like Fauchon and L'éclair de Genie were selling exquisite éclairs that were unlike those we had ever seen in Singapore. We discovered that the French had essentially reinvented the éclair! Gone are the days of boring éclairs filled with whipped cream or plain pastry cream and then glazed with dark chocolate.Enter the twenty-first century éclair –– a tender choux pastry with a uniquely flavoured cream filling, artfully glazed and garnished with toppings that guarantee a party in the mouth. Amongst our favourite and most memorable flavours we had ever tasted were Yuzu, Passionfruit, Orange and etc.And so not only did we fall in love with the beautiful city, its culture and language, its cuisine and pastries, we also marveled at its creativity, passion and uncanny ability to turn almost everything into an art –– even the once humble and diminutive éclair.Therefore our vision is to bring a little piece of Paris to Singapore, by turning a classic French pastry into a modern art piece with enhanced flavours that perhaps would be worthy of praise from even the great French pâtissiers themselves some day.We insist on using top quality ingredients to produce the finest tastes and flavours. Each piece is lovingly assembled by hand –– generously filled and delicately garnished with utmost precision.
